These lemon sugar cookies are sure to be a big hit!
Ingredients:
1 cup cold butter cut into cubes
2 cups sugar
2 eggs
1 tsp. vanilla extract
1 1/2 tbsp. fresh lemon juice
1 tbsp. lemon zest
3 cups flour
1 1/4 tsp. baking soda
1/2 tsp. salt
(Note: For an extra tart cookie use more lemon zest
I also added 3 tbsp. lemon juice powder to the flour mixture.)
You may add 1 to 2 drops of yellow food coloring for color.
Instructions:
Preheat oven to 350 degrees.
Cream the butter and sugar until light and fluffy in a large mixing bowl.
Add the eggs, vanilla, lemon juice, and lemon zest - stir to combine.
Stir in flour, baking powder, baking soda, and salt and mix just until combined.
Drop dough onto a parchment-lined baking sheet.
Bake for 9 to 11 minutes. Sprinkle with sugar or white sparkling sugar.
(I used organic brown coconut sugar. It has a lower glycemic index,
but is still sweet and sparkly, but you feel a little less guilty about all the sugar.)
