It's the time of year that calls for comfort food. There's just nothing better when the weather is chilly than a warm bowl of chili - it's the ultimate comfort food! This recipe allows you to create a cozy bowl of yumminess that you're sure to enjoy!
Ingredients:
1 1/2 lbs. stew meat diced into 3/4" cubes (I use sirloin)
Kosher salt and freshly ground pepper
1 red onion diced
4 cloves garlic minced
1-3 jalapenos minced
1 14.5oz. can diced tomatoes
1 8oz. can tomato sauce
2 tbsp. chili powder
2 15oz. cans of kidney beans drained and rinsed
shredded pepper jack cheese for serving
Other toppings are optional
Instructions:
1.Season the meat with salt and pepper.
2. Heat olive oil in a Dutch oven or large pot over medium to high heat. Add meat and sear until browned, about 2 minutes. Add onion, garlic, and jalapenos. Cook about 1-2 minutes. 3. Stir in the diced tomatoes, tomato sauce, chili powder, kidney beans, and 1 1/2 cups water, making sure to cover most of the ingredients with the liquid.
4. Reduce heat to low and simmer, covered, stirring occasionally, until the meat is tender about 1 1/2 - 2hrs. (This is where I transfer it to a crock pot and finish cooking there.)
5. To serve, top with the shredded pepper jack cheese, and add sliced jalapenos if you like.
*Note: Other options for toppings to consider - sour cream, fresh cilantro, avocado, chopped onion, and other varieties of cheese. As with all chilis, I serve this one with warm cornbread, butter & honey. Coming up next, I'll share my favorite jalapeno corn muffins. Enjoy!
