This recipe is one of my favorite go-tos because it's so easy and I can always depend on amazing results! As the weather gets warmer, with this recipe, there's no slaving over a hot stove or grill, and it's a super time saver too! Just throw the ingredients together in a slow cooker in the am, and by dinner time you have the most tender, flavorful chicken that's ready to shred for soft tacos, crispy tacos, burritos, or how about a taco salad? Put out the extras and you'll have a delicious meal that's perfect for a summer day, but I'll admit -
this one is so good; I make it all year long!
Ingredients:
1 (16oz.) jar of salsa
1 (1.25oz.) package of taco seasoning mix
1 lime juiced
3 tbsp. chopped fresh cilantro
3 lbs. boneless, skinless chicken breast halves
Instructions:
Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker. Stir to combine. Add the chicken breasts and stir to coat with the salsa mixture. Cover, and set the cooker on high. Cook until the chicken is very tender (about four hours). If you prefer, set the cooker to low and cook for six to eight hours. Shred the chicken with two forks to serve.
Note: I set the slow cooker on low and let it go all day, even if it's longer than eight hours.
If you like more spicy chicken, choose a hotter salsa, if not, choose a mild to medium salsa.
Suggestions for toppings - chopped onion, chopped tomato, shredded lettuce, sliced jalapenos, chopped fresh cilantro, sliced or chopped olives, sour cream, cheddar cheese, and additional salsa to serve.
Garnish with a sprig of fresh cilantro and a juicy wedge of fresh lime - enjoy!
