Memorial Day Star Cookies

These patriotic cookies are perfect for a Memorial Day gathering!

Easy to make! Tasty & festive too!

Light, crispy and sweet.

Whether you're planning to Bar-B-Que with a large group of family and friends, or just having a small get-together for Memorial Day, these cookies are sure to please! For that festive red-white-and-blue patriotic vibe, try using a red jam and a blue one too. Although they are almost too pretty to eat, these cookies are also quite tasty, so they probably won't last too long. The recipe only makes 1 dozen, so depending on the size of your crowd, you might want to consider making more than it calls for.


Note-To make these cookies, you will need a 3 1/2-inch star-shaped cookie cutter and a 1 3/4-inch star-shaped cookie cutter.


Ingredients:

2 sheets puff pastry thawed

1 large egg beaten

1/4 cup jam, jelly or fruit preserves

coarse sugar for sprinkling


Instructions:

1. Preheat oven to 400 degrees. Line two baking sheets with parchment paper. On a lightly floured work surface, roll each sheet of puff pastry into a 10-by-12-inch rectangle. Using a 3 1/2-inch star-shaped cookie cutter, cut out 12 stars from each sheet. Transfer to prepared

baking sheets.

2. Brush the points of twelve stars with egg. Carefully spoon about 1 tsp. of jam into the center of each star. Using a 1 3/4-inch star-shaped cookie cutter, cut out smaller star shapes from the center of the remaining stars. Place the stars with the holes over the ones with the jam, lining up the tips the best you can. Press the edges gently to seal. Brush the tops with egg and sprinkle with sugar.

3. Bake until golden brown, rotating halfway through, for a total of 10 to 12 minutes. Cookies can be made two days ahead. Store tightly covered at room temperature. Enjoy!
