Shamrock Shortbread Cookies

Just in time for St. Patrick's Day -

a cookie so good, even a leprechaun would enjoy them!


Five white plates of shamrock shaped shortbread cookies with bright green sprinkles.


Super easy.

Super good.

Super green.








Ingredients:

2 sticks of softened butter

3/4 cup sugar

2 large eggs

1 tsp. vanilla

3 1/2 cups all-purpose flour


Instructions:

1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

2. In a large bowl cream together the butter and sugar using an electric mixer.

2. Add the eggs and vanilla and beat another 1 to 2 minutes or until light & fluffy. 3. Gradually add the flour and continue to beat until well blended.

4. Form the dough into 2 balls, wrap them in plastic wrap, and chill for at least 2 hours.

5. On a lightly floured surface, roll each ball of dough to 1/4-inch thickness using a rolling pin.

6. Cut with a cookie cutter or knife into shamrock shapes, and place on a baking sheet

one inch apart. If using green sugar sprinkles, do it now (before baking).

7. Bake for 10 to 12 minutes or until the edges are golden brown. Then cool on a wire rack.

8. If you prefer to frost and decorate the cookies instead of the green sugar sprinkles, wait until the cookies are completely cooled to do so.

*Note: If you share these cookies with a leprechaun, he might be more inclined to tell you where he hid his pot of gold! But if not, at least you'll have cookies — enjoy!
