Homemade Shrimp Taco Recipe with Fresh Cilantro Lime Slaw

Not only do these savory little bites look and taste amazing,

but they are packed full of health benefits too!

Shrimp tacos with fresh cilantro slaw

Shrimp: supports heart health, reduces the risk of cognitive decline, and promotes thyroid function.

Cabbage: improves digestion, fights inflammation, and lowers blood pressure and cholesterol.


Avocado: helps reduce blood pressure, supports gut health, and promotes cognitive function.

Red onion: helps fight bacteria and protects the body from ulcers, various cancers, heart disease, and allergies. Lime: reduces inflammation, prevents certain chronic diseases, promotes heart health, and improves immunity. Together these amazing tacos are filled with antioxidants and vitamins!


Ingredients:

For the shrimp:

1 lb. shrimp fresh or frozen / peeled, deveined, and the tails removed

1 tsp. paprika

2 tsp. cumin

2 tsp. coriander

1/4 tsp. cayenne pepper

salt & pepper

olive oil

For the slaw:

shredded cabbage (the pre-shredded stuff in the bag works great and saves time!)

1/4 cup oil

2 green onions chopped

1/2 cup cilantro

1/2 jalapeno

2 cloves garlic

2 limes juiced

salt 1/2 cup plain Greek yogurt

Extras:

8 to 10 small tortillas - corn or flour

red onion finely sliced

avocado sliced

cotija cheese

lime wedges


Instructions:

Prepare the slaw:

Add the onion, cilantro, jalapeno, garlic, lime juice, salt, and Greek yogurt in a blender or food processor. Pulse until fully incorporated and resembles a sauce. Reserve some of the sauce for topping the tacos later and pour the remaining sauce over the shredded cabbage. If the sauce is too thick, you can add a little cold water until it becomes the desired consistency. Set aside.

Season and cook the shrimp:

Pat the shrimp dry and season with paprika, cumin, coriander, cayenne, salt & pepper. Heat olive oil in a large skillet and place the shrimp in the pan so that each one has contact with the hot pan. Cook while flipping often until cooked through - about 4 to 6 minutes.

Assemble the tacos:

For the best presentation, smash some of the avocado onto a warmed tortilla, add a bit of the slaw, 3 or 4 of the shrimp, a drizzle of the extra sauce, red onions, and cotija cheese. Serve with an extra lime wedge.
