With Easter weekend just days away, this salad is a light, fresh, and delicious complement to any Easter dinner or brunch.
Ingredients:
1 bag of fresh spinach leaves
1 cup sliced fresh strawberries
1/2 cup crumbled Gorgonzola cheese
1/2 cup raw pecans
1/4 cup balsamic vinegar
2 tbsp. honey
1/2 cup olive oil
salt and pepper to taste
Instructions:
Combine spinach, strawberries, Gorgonzola cheese, and pecans in a large bowl.
Stir together balsamic vinegar and honey in a medium bowl, add the olive oil slowly while whisking continuously. Add salt and pepper as desired.
Drizzle the dressing over the spinach mixture just before serving.
Note: This Strawberry Spinach Salad recipe can be modified. Although it's great with strawberries (and they are in season right now!), blueberries would be a wonderful addition! If you're not a fan of pecans, try switching them out for sliced almonds. Gorgonzola has a very strong flavor (similar to bleu-cheese), if that's not something you're into, try switching to feta cheese instead.
