Summer Side Series Presents Mojito Watermelon!

The weather is warming up, and what better way to cool down than with this refreshing recipe - it's as easy to make as it is to eat! This minty-lime chilled fruit is a great side for burgers or any other summer dish. It's also a refreshing snack all on its own! However you serve it, you can't go wrong. Mojito watermelon is juicy, sweet, and just a little bit tart...


Sweet and juicy Mojito Watermelon!


Ingredients:


2 tbsp. olive oil

2 strips lime zest, sliced, and 2 tbsp. fresh squeezed lime juice

1tsp. sugar

Kosher salt (I use this one)

1/2 small watermelon, rind discarded, chilled and sliced

1/3 cup torn fresh mint






Instructions:


Whisk together the olive oil, lime juice, and sugar in a bowl. (super cute bowl!)

Add salt and pepper to taste.

Serve the watermelon topped with the dressing, lime zest, mint, and flaky sea salt.


Be sure to chill the watermelon first and serve immediately after adding the dressing (otherwise, it gets mushy). Here's a fun idea! To add a little "zip", try adding a little Tajin, I have also used the Trader Joe's brand Enjoy!

They are sweet and spicy with lots of bacon...I recently doubled the recipe and tripled the bacon. I took them to a barbeque, and there were none left! Big hit every time!
